MY MOM LINDA'S TUNA SALAD: good for sandwiches, eating on top of lettuce salad, on top of pasta, with crackers, or just with a fork.

1 can of chunk tuna in water (salted or unsalted)
2 sticks of celery, minced into like .5cm pieces
1 hard-boiled egg
1/4 of a small onion, minced fine
Beaver brand tartar sauce (with dill and capers! Mmm!)
alternately: 1 T mayonnaise, 1 T plain yellow mustard
2 T of dill pickle relish, OR 1 big dill pickle, finely minced
a liberal shake of Johnny's Seasoning Salt (optional - you can use plain sea salt or other non-MSG-containing, boring sodium chloride)
a liberal shake of hot paprika
a liberal shake of coarse ground pepper

Combine everything in a bowl, breaking up the tuna and the boiled egg with a fork. Refrigerate overnight, or until everything is fairly chilled. Actually it's super delicious when it's hot, too.

Three servings, or more if you exercise restraint. My tuna sandwich this afternoon was about three inches thick and had tuna spilling over the edges.

Might I suggest you watch "Hell's Kitchen" whenever you feel overwhelmed? Sometimes it's cool realizing there are people out there that are worse off than you. ^_^

Noooo, actually it doesn't make me feel better at all - it makes me feel like an even bigger whiny asshole.

Also, I am almost always overwhelmed when I'm at work, so there are a very limited number of things I can do to turn it around. Fortunately, talking to friendly co-workers frequently does the trick, and there are lots of them around.

Celebrity gossip also helps a whole lot, but it's a slow news day, and has been for a couple of days. If I've got time, five minutes of reading about what a screwup Lindsay (or Pete Doherty!) is does me a world of good. Top it off with pictures of cute boys, and I am ready to rumble.

(note to self - put Milo back on work desktop)

What is your recipe for tuna salad? I made some pretty fucking amazing stuff myself today, just by experimenting with chopped apple, sweet relish, a pinch of lemon pepper, and some finely-chopped walnuts but I dunno, if yours is better I should try that. :P

Get some celery salt, too, while you're at it. Those two were my holy grails of cookery when I was a kid choosing to make my own dinner.
