Kolackys

2 sticks butter
2 c flour (see below for substitution)
1 8 oz. pkg cream cheese OR 1 c sour cream
apricot filling (Solo is good) or other filling

Blend first three ingredients well. Divide into 4 pieces on waxed paper, close and flatten, refrigerate overnight. Roll thin (not *too* thin--1/8 to 3/16") with flour (or, better, on pastry cloth), cut in about 1 1/2" squares, fill with apricot jam (about 1/4 teaspoon per), pinch 2 corners together tightly. Bake at 375 for 15-18-20 minutes till crisp, not burned. Cool on rack, sprinkle with powdered sugar (a sifter does this well).

Gluten-Free Version
The flour can be substituted VERY effectively by Bob's Red Mill All-Purpose Gluten-Free Flour. I cannot speak to other GF flours, but this one worked great.
