I'm actually not enjoying the warrior because I can't put Ohgren in my party and I really think he's totally hilarious, especially when talking to Wynne. I loved my mage because she was my first character but combat wise I have to say that I loved my Rogue way more. There are some people who say that 3 mages and a tank is the best but I think that if you have an archer rogue, Wynne (set up with combat magic), and then Ohgren and Alistair (or you could put Sten in there) it gave me a lot of diversity and it worked well because you still had enough ranged attackers. But that's just my personal preference.
After my first "completionist" run-through I stopped carrying about having every box opened. Most of the time it's just crap in them anyway, so I rarely bring a rogue along.. Bringing Leliana always boosts her relationship too fast and bugs her out.
As a warrior (duel-wielding scrapper) my team was Ali-tank, Wynne- healer and then the last slot as a trade out depending on the area and just how I was feeling.
As a mage (healing specc) my team was Ali-tank, Morrigan- dps and then swapping out the third slot.
On my Dalish (archer) I wasn't romancing Ali so I avoided him. Sten was my DPS tank, Wynne- healer and swapped out the third slot.
Obviously Alistair is my fave team mate to bring along, mostly because he starts off sword and board specced and therefore is the best tank. Shale has a lot of HP but no damage mitigation so I find she dies a lot easier. I hardly ever use the dog after Lothering either. He's adorable, but doesn't bring enough to the party. *pats dog*
My party always depends on what's going on and what character I'm playing.
With my mage, who was maxed in most primal and healing, I always took Alistair as my tank, Leliana as my rogue (though I did switch to Zeveran once I had his lockpicking maxed) and either Wynne or Morrigan for extra mage needs.
My rogue (Dualist) tends to have a tank (Alistair, Sten or Shale), Morrigan and/or Wynne, and if I still needed a fourth I'd choose someone for the banter convos.
