oatmeal ginger chocolate chip cookies

The photo does these no justice! The taste of these cookies was exactly what I was looking for... I had just made some crystallized ginger (yum!), and had a craving for some oatmeal chocolate chip cookies with said ginger chips added to them. That sounds like a lot of work - but I bet it tastes amazing, and your kitchen must smell so good!

How does the ginger taste with oatmeal and chocolate chips? I love them both, but I'm having a hard time picturing them together.

Mmm! I need to make more ginger. It wasn't difficult was it!

I was just thinking about those cookies again last night.. i still have enough ginger left for them, but I never want my supply to be "empty!" :P Hence.. the need to make more!

No, it wasn't difficult at all! It just takes time and patience. I bought a huge piece of ginger, I think I'll have a supply of it for awhile! (that is, if my husband doesn't eat it all. He snuck a few small pieces while it cooled! :P)

I'm really looking forward to having these cookies for dessert on Monday. I'm making butternut squash soup and stuffed pork tenderloin. This fall weather has put me in the mood for yummy fall foods! :D

It's seriously so good! I have a lot of recipes that call for candied ginger, I just haven't gotten around to making them yet. There's a lemon scones with candied ginger recipe somewhere on my favorites, I've been meaning to make it!!! I usually get humongous pieces of ginger at the farmer's market for like 50 cents! (if even that much!) I love ginger :)

That soup sounds good too! I also bookmarked a similar recipe! It had roasted chestnuts in it too! sounded reeeally good. We're having pork sirloin tomorrow with that cinnamon plum chutney I made earlier. I cannot wait to try it!! It's not "fall weather" outside, but it's fall food season for me. I haven't come to terms with 80 degree october weather, yet!

I'm about ready to make my halloween cookies. i feel like I've been preparing so many halloween items for so long, that the holiday already happened! but it didn't!
