Where could you pick up those squash, and what do they taste like?

if I can't find them, do you suggest and alternative?

I live in Seattle and they have them just about everywhere, including Safeway, the most mainstream/non-specialty grocery store. They usually have them in the refrigerated section of the produce area. They're pear shaped and pale green. According to my produce book, they're in season from May through October. They don't have a really strong flavor, like most squash. The flavor in this soup comes mostly from the cilantro. You could probably substitute another summer squash, but the final product would have a different texture. I've never had pattypan, but based on looks alone I suspect that green pattypan would make a good substitute.

Oh, and they're supposedly pretty common in Mexican cuisine, so if you're having trouble finding them at the regular grocery store you could try a Mexican grocery if there's one near you.

You can cut & core & then steam or boil them, then when cooked remove the skins. Saves you from peeling skin.
I love mirlitons (chayote)!
