Veggie Lasagna

Yep, I'm a little behind on posting here.. sorry.. more to come.

We FINALLY went to our local farmer's market after forgetting the past two months, so I went a little crazy with the veggies. :) Obviously I had to make a veggie lasagna before the weather gets too hot to want to use the oven.

I'm starving right now - waiting on Jeremy to wake up from his nap so we can do some grocery shopping and have lunch - and then just made my stomach grumble that much more!!!

Hmmm... I might just have to make lasagna soon now =)

how long do you bake it for?

Usually just under an hour.. about 35-40 minutes covered in foil, then uncover and cook another 10-15 minutes. Then let it rest about 10 minutes before serving so it doesn't fall apart as much when slicing :)
