wow, this is definitely a very unique flavor for enchiladas! I love that! I may have to try this! I don't like the red enchilada sauce, unless it's homemade because the crap in the can is usually too pungent for me. But, this looks REALLY yummy and spicy... the good kind of spicy!

You're very welcome :-) The spicy pumpkin sauce, along with a good sharp cheddar, really do make for a rich flavor.

that sounds divine! it would be SO good on halloween... deviled pumpkin's that ate enchiladas, lol!

BTW, I don't know if you are already a member, but, the community, bakebakebake is doing their monthly theme and it's cheese. Most of us post desserts, so it would be lovely if you posted this there, too! At the end of the month, they gather all the recipes that used the month's theme food and everyone votes. if you win, i think they buy you a couple months of livejournal!

I am cautious about pumpkin, because it sometimes seems to overpower everything else. I liked this, though! What do you make with pumpkin?

I put it in my oatmeal, I can make pancakes with it, I spread it on toast, I mix it in muffins (2 different types) and I mix it with peanut butter for sandwiches. I also have a tendency to mix it in my vanilla creme International Cafe drink. :]

Was this in the Everyday Food magazine? If so do you happen to remember which issue (month, year)? I get the magazine and figure I'll just go pull the magazine from my shelf rather than print this if I can.

It's from the book, which as I understand it is recipes from the magazine. I have never looked at the magazine itself, though, so I'm not sure - sorry!

How is the magazine?

I like the magazine. I usually end up making at least 2 or 3 things from each issue. Plus there are more I end up marking to try later. It's doesn't really have a lot of extras besides recipes so you probably got everything in one book that I have in 12 magazines.

I just looked it up on the website and it's from the May 2004 issue. That's before I was a subscriber. So printing it off to try. Thanks again.
