I made this the other night, with a filling of black beans, corn and spinach, and it was fantastic! The sauce was so garlicky and simple, I loved it. I added the juice of a half a lime, and it was perfect.

For some reason though, the tortillas soaked up too much liquid from the sauce during baking, and I wasn't able to scoop out individual enchiladas - I had to cut squares, lasagna-style. I think maybe it's because I used a smaller baking dish. It looks like you used a 9 x 13? I used a 10" round dish. Didn't matter much, it still tasted awesome! :o)

Hi! Nice to hear from you - made any cornbread lately? :-)

The pan I used was about 12 X 7 - a weird size, but it worked. I had the same problem - it was pretty much impossible to scoop up an enchilada as a unit. I was thinking that maybe I need to leave more space between each one - mine were kind of crammed in there. But as you say, it doesn't matter much...

Haha - I've been thinking about that cornbread lately! It's chilly and rainy here today, perfect weather for chili and cornbread. :o9

Try the spinach-black bean-corn version for your son sometime, it was really good! I posted the exact recipe I used on my LJ if you want to see what I did...
