Lemon Poundcake

One of my coworkers has a lemon tree in their backyard, and recently they gave me a shopping bag half full with lemons!! Needless to say, I'm going to be making a lot of lemon recipes in the next couple of weeks. This bothers me none, as I looooove lemon

and the recipe...so i need 2 tablespoons of freshly grated lemon zest?

Yep, that's what I used.. although truthfully, I will add probably another tablespoon next time I make it! I wanted to give some to the guy who gave me the lemons but I'd already eaten almost half of it since I made it, so he only got a couple slices :)

I use this SAME recipe, I think. Either that or they are very similar. & I agree, you need more lemon. ESp in the glaze, I add like 3-4xs the lemon juice.

I think maybe I'll make my recipe soon...DH LOVES lemon anything.

I have a silicone bundt pan that I have been wanting to try out, so maybe I'll double the recipe and try that. Either way, this looks really good (I love lemons!) and I'll have to try it very soon :D

oh my gosh how cute is that!!! Hmm I kind of want one now, but not for thirty bucks. Maybe $15... :) Thanks for the link! I'm sure the bundt pan will do just as fine though with the recipe doubled! Pretty much anything made in a bundt pan is really yummy. I love lemons too, they are good in many forms.

I'm sure you could find some for cheaper than that, I'll try and remember to check for them the next time I'm at Bed Bath & Beyond. If I find some for a good price, I will let you know :)
