Burgers, Red Potato Salad, Fresh Corn on the Cob

Not exactly 'fancy' by any means but this sure is one of my favorite summer meals! Boyfriend is missing out tonight.. he is at work, and I do make a mean burger and potato salad!

I know!! Seriously.. believe me it wasn't from the flash - it was like the palest corn I've seen ever, a very VERY pale soft yellow.. but it was tasty anyway! It's the looks that count it's the kernel on the inside right? :P haha

I worked for an agricultural company for 3 years. Basically, we were the ones that sprayed the bug chemicals and fertilizer on corn and bean fields. Yellow corn is sweet, white and yellow (AKA peaches and cream) is sweeter, and if you can get your hands on all white corn, it's like eating candy!

That's the basic rules, but sweet corn is touchy. If it's not picked at just the right time, it's bitter and tough. There are so many different varieties of it, too! Ok, I'm done rambling now. :)

I'm allergic to mayo, so my version of potato salad is reds boiled and quartered, tossed with either sour cream or plain yogurt, some shallot and dill. It's good!

Oohh you know.. sour cream/yogurt is my fave way to make chicken salad!!!! (Especially with walnuts, dill, and purple grapes added to it!)

Well think of it this way.. depending on what kind of sour cream/yogurt you use, you're probably actually eating healthier due to the allergy! Mayo is certainly not a healthy item, even the 'lowfat' kind!

This looks SO yummy. I'm a meat and potatoes girl, all the way. Your potatoe salad is similar to mine, except I add a bit of mustard. For some reason this post made me want to add bacon next time. :)

OOh that would be yummy too, we do that occasionally. Only when we have good mustard though - I'm pretty fussy!

I'm the same way though, we'll be eating some sirloin tip steak later this week.. yummmmm! (And I had steak tips on my salad this weekend!) What can I say.. I could neeeeever be a vegetarian and I'll be the first to admit it. Kudos to those who can but I just love my steak and chicken far too much to ever live life dealing with the cravings.

2 hard boiled eggs, mayo, a bit of mustard, pepper and garlic salt.

Or I don't put mustard and I put in dill, and celery. But we didn't have dill or celery. :)

Oh YUM, now I want some potato salad. I think red potatoes make the best salad too.

I have made a non-dairy version of red potato salad using red vinegar, olive oil, dijon mustard, whole-grain mustard, chopped flat parsley, and minced shallot for a dressing. I love the creamy mayo laden version too, though. :)

Mayonnaise contains no dairy. It's made from eggs and oil.
