Burgers, Red Potato Salad, Fresh Corn on the Cob

Not exactly 'fancy' by any means but this sure is one of my favorite summer meals! Boyfriend is missing out tonight.. he is at work, and I do make a mean burger and potato salad!





Aside from buying it pre-made. That doesn't count as making it!!!

Anyway, you can use whatever potatos you want but I really like red potatos. All I do is put the potatos (whole) in some water on the stove, and boil them until they are tender. Check 'em with a fork if you aren't sure. Usually takes around 20 minutes depending on the size of the potatos. Drain water, let potatos cool down until they have cooled off enough to handle. Then I chop them up (this is MUCH easier to do once they are cooked! that's why this is my favorite method!), toss with some mayo and whatever else you'd like.

My favorite mixture is to add 1 chopped hard-boiled egg, mayo, a little salt and pepper, a little bit of purple (or red, same thing) onion chopped very small, some parsley and some dill. Stir it all together and let it chill in the fridge until you are ready to eat it. Yum! I get compliments on this anytime I make it. Easy and delicious.

Our favorite burger is one that is seasoned with the "Steakhouse Seasoning" grinder/mill. It's a mixture of all kinds of spices and it is soooo good! It adds TONS of flavor to the meat. I love it. I also like my hamburger buns toasated a little on the grill first, I think it keeps it from getting squishy so the whole burger doesn't fall apart as much! :)

Top it all off with some fresh locally grown corn on the cob.. and there you have it. One of my favorite summertime meals!

I may go make a s'more for dessert ....... :P
