Carbs, mostly (diabetic). And yeah, zoodles or spaghetti squash would work. I use cauliflower rice sometimes too, but tend to burn out on cauliflower sometimes.
I forgot about cauli-rice. I tried it out a few years back as an experiment. It was ok, but I didn't LOVE it so I didn't see any need to switch. I DID like the stuffed peppers with cauli-rice and the Chinese fried rice wasn't bad either.
