Eggplant Gyro Filling (vegan)

1 lg. eggplant, sliced into strips 1/4"-1/8" thick and ~2" wide
olive oil

Seasoning Mix
onion
garlic
oregano
salt
black pepper
marjoram

Sounds really good. Might have to give it a try sometime--not sure how much I like eggplant, though...

These are the seasonings used in the meaty filling, so if you use ground lamb you will still get a fabulous flavor. Alternatively if you like mushrooms, use the portabellos instead. Those were fabulous grilled and unseasoned, so I imagine spiced they would be even better.

A related use of eggplant that I like--indeed, the only one I find I like in regards to eggplant so far--is to make baba ghanouj with it. Especially when vast amounts of garlic are involved.

oooh! I'll have to try my hand at making baba ghanouj this summer when the eggplants are cheap. That and an Indian eggplant dish called Vangyache Bhareet (Mashed Eggplant) my friend makes. Garlic makes the world go round. :)

Well, yes, if you show up, slacker. I made these and even had the vegan cinnamon rolls at the cookout but did you come by? Nooooo! You had to be studying. What are you? An undergrad? ;)

In all seriousness, if we can set a good day for it where you can definitely show up, we can have a vegan extravaganza at my place.
