Whither Chewy Cod?

Last night I fixed cod in lemon and butter. Of the four pieces, two came out...chewy. Chewy cod? The other two were flaky and exactly the right texture. Huh. I love fish and seafood, and miss it a lot, being so far from the ocean. Ya know, I'm not even sure people can/should eat fish caught in Lake Michigan, although I'm sure people do

You're right - I get a little too OCD about my designs, but I'm learning to "let go and let Gods!"
