At the hospital

The big day is finally here. I swallowed the pill around 12:35. Jeremy had to leave at that point, and since then, the only person with person I have seen is the nurse, whose shift just ended. That's the thing - healthy food doesn't have to be bland at all. Or unappetizing. To skin a potato, microwave it, and plop it whole, on a pile of peas, just made me sad, considering a few nights previously I had taken some potatoes, cut them into wedges, tossed them with olive oil, kosher salt, and rosemary and roasted them in the oven. Even my kids thought they were good. It didn't take that much more effort, but the results were incomparable. If I ever had to go back, I swear I will make all my own food and take it in with me.

I think it's because a lot of hospital kitchens don't have the training or money to do it right. School lunches have the same problem. I don't really like Jamie Oliver, but I think it was great what he did in that West Virginia school system to teach them how they could make changes that would be healthy and kids would like it!
