The bits about 'I have been waterboarded. Have you been waterboarded? I'll totally waterboard you if you want.' were classic.
(BTW, there's a conservative radio host with the hilarious name of Mancow who agreed to be waterboarded to prove that it's not torture. He lasted a couple of seconds, and when he came out of it, he said that it absolutely -was- torture. It's the same sort of thing that the guy from Straight Dope was saying in the thread that I linked ages ago.)

Though I'm NOT certain i like someone trying to use physical intimidation in these. That's basically saying "oh I cant win via a good argument, uh my muscles are bigger than yours!" Shouldn't we be getting AWAY from that? Otherwise the strong rule the weak again and I'll break out my club and start looking for the hot women first and beat up the weaker men and keep an eye out for the bigger ones. Ninja Caveman ftw!

There's no convincing the pundits, and probably no convincing the viewers, but it's nice to see someone coming in and making soundbyte-worthy arguments loud enough to at least introduce a little bit of cognitive dissonance.

However (and I know this wasn't what he was talking about, but.) before I hear anyone saying that waterboarding isn't torture, I want to see them waterboarded first. Because it is. I have yet to find a case of someone being waterboarded and coming away saying anything else.
I also think there's a certain element of 'things out there aren't the way you think they are, and you'd know that if you'd been there'. Like think of the anime fanboys and their unrealistic opinions about Japanese culture. There's a certain point where you have to tell them to shut up unless they've done the research. Pundits like Hannity have a weird, unrealistic view of what they think is going on in Iraq and Afghanistan, a view that's being pretty much unanimously contradicted. So it might also be that Ventura, knowing the things he knows and having seen the things he's seen, gets a little bit sick of the ignorance and falsehood.
