On Olive: I wonder if she's got separation anxiety? Maybe you could download some episodes of the Dog Whisperer and watch them with Jake. It could be a productive kind of date. Jeff and I did that and learned all sorts of things about ourselves and Maya, and now (for the most part) she behaves like a little angel. Anyway, I hope things level out for you soon and you find a rhythm. :)
I definitely think Olive tearing up her bed is a separation/frustration thing for her... maybe put her in a crate while you guys are gone? I don't know if crating was an option you were thinking, but it might save you a lot of aggravation.
I can definitely agree with the part about you missing time with Jake. I'm so busy and Nick's been so busy that we see each other maybe 15 minutes a day and we haven't really had a date night or had quality "alone" time in a long time... since way before his accident. I think it will get better soon, but not soon enough.
i want to second the vote on separation anxiety. either that, or she is PISSED that you are leaving her home all day long. our dog olie does spiteful things when we leave him home (like pull my mother's brand new table runner off the dining room table, bringing down the vase of fake flowers, and sprinkling the flowers all over the house and yard; eating her $300 cell phone, etc.)
we usually try to remedy this by making sure that he has a big rolled rawhide chew to keep him occupied
