Recipes, please

OK, so we did a Boxing Day dinner party where we cooked roast beef. A whole cow, almost. Seriously, we overbought.

So I have many pounds of medium-rare roast beef to use.

Yes, sandwiches are nice, but this is GOOD beef. I'd like to do more with it.

What do you suggest?

Whip up your favorite gravy, grab a loaf of fresh bread, and make yourself some hot open-faced beef sandwiches.

I've also been known to stir-fry leftover rare roast beef and use it in an omelet or fritata.

Stir fry is always a good option, too.

Did you make gravy? Hash is the ultimate leftover dish. Fry up some onions, garlic, celery, dried thyme, etc. Add cubed beef and cooked potatoes (either leftovers or parboil some; the ratio of beef to potatoes should be 1:1), and saute until nice and brown. Deglaze with some white wine, then add the gravy. Jazz it up with a little Worcestershire, vinegar, hot sauce, even a bit of leftover coffee: Whatever you feel like.

3 oz. of the best vodka you can get, chilled as cold as you can get it
1/8 teaspoon French vermouth
Stir briefly and gently in a chilled pitcher containing ice that has come directly from the freezer, then strain
Fill oversize chilled martini glass
Garnish with 2 or 3 olives
Enjoy

Oh, the beef, you say? Give it to the family next door. It'll be off soon anyway.

Are you sure you're making the sandwiches right? Two slices of beef spread with the condiment of your choice and a few vegetables inbetween?
