Recipes, please

OK, so we did a Boxing Day dinner party where we cooked roast beef. A whole cow, almost. Seriously, we overbought.

So I have many pounds of medium-rare roast beef to use.

Yes, sandwiches are nice, but this is GOOD beef. I'd like to do more with it.

What do you suggest?

How do you feel about chili in a slow cooker? Or not in a slow cooker if you don't have one. Grind about 2 to 3 lbs., add two cans of tomatoes *(14oz cans), 2 diced or minced onions. 6 tablespoons of chile powder, more if you like it hot, 1 table spoon of ground cumin, 1 teaspoon of ground sage, half a teaspoon of kosher salt, 1 teaspoon of pepper, and 6 tablespoons of brown sugar.

In a slow cooker put on high for 6 hours. In a pot on the stove bring to a boil and then let simmer. The longer the better. You can modify this with rice or potatoes if you like, or make as is and spread on a pizza dough and roll dough into a stromboli and bake for 30 to 35 minutes at 400.

Or kabob some chunks with a sauce of honey, soy, worstershire (sp?), ketchup, mustard, salt and pepper. Or sub peach jelly or preserve for honey and add a clove of garlic, or half a cup of chopped mint.
