For you other question, yeah you can KO a wild pokemon with thief and still steal its held item, so long as it is holding an item, and your thief-ing pokemon is not.

You've been raising it for God knows how many levels by battling. Therefore it'll have accumulated a good number of randomly distributed EVs. Without knowing these EVs, you cannot calculate IVs... if you leave the EV input blank, your IVs will come out way too high. As they have. Sorry, your Tyranitar isn't awesome... your friend is just a little on the slow side =(
