Sept 11: Racked. Bit of trouble with the siphon. Added 5 pounds of honey and water to top stuff off. Specific gravity was 1.14 before the honey. This means we should (in theory) be about 18% ABV already... Tasted like very harsh cider. Alcohol had not melded with the flavours.
