ookay. Looks like this Oral Allergy Syndrome thing is kicking me (and Beth) around once more. The Mead, as those of you who have tasted it know, is made from fresh local honey and fresh local crabapples. Racked to the mini Carboy today. topped up with warm water and 1/4 cup of sugar. Pressure inside of Caboy, but no burping yet. Should start within a day. Smelled like Ale, in the good way. Not enough to taste, so that will wait for bottling day in a Month or two (1 to 2 weeks after burping stops).

So Sunday we bottled batch 2. Much drier and probably about 13 to 15% (can't be sure as the methodology negated the alcohol measurement accuracy). Probably will take longer to mature in bottle than the other batch. forgot to call Stu (he provided the fruit), D'oh! First tasting should be March 1 or thereabouts ( Read more... )

We now have 24 bottles of 18.34% ABV Crabapple Mead. Had a fair amount left over. We tasted it, Beth (unfortunately) liked it a lot. I think it needs to age.

Next tasting is December 31.

Yesterday, we went and picked up bottles and an Auto-siphon. We went with champagne bottles because we're not sure if it's going to be carbonated and we wanted to use the plastic "euro corks" because we don't need special equipment to put those in ( Read more... )
