Sept 7: Not much change. Foam disappearance slowing. Smell mellowing (nice!)
Sept 8: Ditto. Got a bit warm, though. If we do this more often, we should try and find a place with more consistent temperatures...
Sept 9: Mushed apples back into the Must. Nice smell, sortof like Ale, but also like Wine. Still very apple-y, and the colour is much like ale. This should pale out when aged. Foam again going down
Sept 10: Just looked at the fermentor, and I can see the foam going away. We will probably want to Rack soon (within the next few days). Aside from the foam almost being gone, it “smells” and “feels” like we should do that soon. I figure trusting instincts is probably good.
Sept 10 update: No foam. The stuff I’m seeing is the apples trapping the CO2. We should Rack tomorrow or tonight.
