OK, this is complicated! There is a good local sandwich chain here that actually slices the meat, but I don't actually go there that often because it's out of the way. I am honestly more likely to go to Panera. But in a perfect world I WOULD go to the meat-slicing deli place & I understand your feelings. Although the local chain DOES use mayonnaise by default, I assume that is in concession to local tastes and they will happily just give you oil & vinegar.

I feel like anything where the ingredients are actually fresh (as opposed to pre-sliced or thawed) will be better-tasting. Also, your tomatoes are probably all crappy winter tomatoes in Boston; the local places down here still have ripe ones! But, the cheese dries out if it's not sliced right then; that makes for a sad sub.

I really think the only sandwich place around here that slices meat off an actual hunk of meat is Jersey Mike's. And since Jersey is in the name I just imagine that's part of their schtick. ;) Publix (which is a grocery chain, they don't go that far north I believe) uses pre-sliced meat and cheeses on their sandwiches, but they also have an actual deli with meat they slice off of hunks of meat, so I think even if they've given me slices from their fridge unit that it was probably just sliced earlier that day.

I honestly never think about it because I've never lived in an area with actual delis or bakeries or butchers in the traditional sense. I mean, we have bakeries, but they're like, cupcake and dessert fares and not bread.
