The cauliflower turned out fine.  I don't think I'll have Ray and Emily jockeying to get the remainder of it, the way they do with my mac-and-cheese, but that's okay.  I'll eat the cauliflower ( Read more... )

I love welsh rarebit, though as a child I called it "rabbit." You can also use the same cheese sauce to make the Springfield, Il classic horseshoes. Horse shoes are toasted bread, a shaved meat (usually ham), french fries, topped with a cheese sauce and melted together to perfection in the oven. Mmm... now I want a pony shoe (half a horse shoe)

The rarebit was wonderful. I added bacon, grilled tomato slices, and a side of broccoli to make it a little healthier. Just a half-cup of beer in the sauce gave it a nice amount of tang.
All in all a satisfying Saturday night supper.

I love cauliflower, so I'd be right there with you. I'm also sure the bread was wonderful. I have found that people that cook the things themselves are much harsher critics than those that enjoy them. :) And for a brief minute, I misread that you were going to make Welsh rabbit.

It's funny that you made the rarebit/rabbit connection. I looked it up in my Webster's dictionary, to confirm what I suspected. Rarebit is a corruption of rabbit. I need to do more research, but I'm guessing cheese sauce on toast was something one might cook if one didn't have a rabbit to eat, long ago and far away.

What exactly is Welsh rarebit? I could google it, but I somehow suspect that you have a fabulous recipe you'll share if I ask nicely. :)

Cheese sauce over toast. Most recipes start with a roux, a little melted butter or oil with a few tablespoons of flour mixed in. Then you add milk a little at a time, plus the shredded cheese and I include half a cup of beer, which gives it a nice bite.
For spices, most people use a bit of Worcestershire sauce and some Tabasco.
I had a wonderful hand-crafted cheddar from Wisconsin to use, plus I grilled some tomato slices and cooked some uncured bacon to put on the toast before the cheese. A side dish of broccoli made it healthier. All in all, wonderful meal for a cold Saturday night.
