You already have plenty of recipes, so I'm just going to assure you that the amounts of red food coloring (1 or 2 ounces) are correct; there is a lot of coloring in the cake to counteract the presence of the cocoa powder and give the baked cake a pronounced red color (though it's not *bright* red; it's muted slightly by the brown cocoa powder).

In related news, I'm really craving red velvet cake. *g*

And thanks for the reassurance - it seemed such a lot, I couldn't imagine it, but I guess it would take a lot to colour through cocoa.
