Salad with strawberries and schnitzel

Preparation time: ~ 20 min




Ingredients for 4 servings:
  • 200 g young pods of beans
  • 450 g strawberries
  • 100 g mix of different salad leaves (radicchio, rucola, Frisse, corn, etc.)
  • 100 g cheese e.g. Emmental
  • 4 pieces of pork schnitzel (approx. 125 g each)
  • 2 tbsp. olive oil + 3 tbsp. for frying
  • 1 tbsp. balsamic vinegar
  • 2 tbsp. sugar
  • pepper
  • salt

Directions:

Wash schnitzel and dry it with paper towel, sprinkle with salt and pepper. Put beans into salted boiling water and cook for 3 minutes. Pour them with cold water, so it has not lost its color. Wash salad leaves and strawberries. Add 200 g of strawberries in a blender, chop the rest into quarters, and chop cheese into cubes.

Preheat a grill pan with olive oil and lay out schnitzel, fry on high heat on both sides for 1 minute, then flip and fry until brown on medium heat.

Meanwhile, lay out salad leaves on a la carte dish, put beans, strawberries and cheese on top. Add salt and pepper to taste. Add 2 tbsp. of olive oil, balsamic vinegar and sugar to the strawberries in the blender, and whip it to the consistency of the sauce.

Put the schnitzel on each plate and pour strawberry sauce over the salad and a schnitzel.

Serve with roasted potatoes.
