I used to do what you're doing until exactly what you described happened. And actually, I've had even worse things happen as a result of accidentally clicking "save" instead of "save as" since they're pretty much on top of each other.
A good habit to get into is to create the file you are going to save to before you even open the program. I'm not sure what you're using, but for example... If you're using Photoshop layers with the grid on the bottom in Windows, hold the CTRL button and drag the file a little bit. This will create a 'Copy of ..." file really fast that you can rename later. Then, just go Save-crazy while you're working. If you have the option, turn autosave on, too then because you aren't risking overwriting your old work at all. It helps to remove the fear of saving this way which will mess you up when you are distracted/tired/hot.
