Coconut Milk

My mother is on some specialty diet that involves a lot of non-processed foods. She needs coconut milk that does not include guar gum or sugar, and has looked at Trader Joe's, PCC, Fred Meyer, and Safeway, which is most of the grocery stores in our area. Try Asian food stores, in the refrigerated areas or frozen foods area. You might find fresh scraped coconut (white and fluffy) but frozen. Add water to it, stire and sieve (like making a nut milk).

Thank you, I will pass that on. We did look in the international aisle of PCC, but they didn't have exactly the right kind. I'm sure a whole store will have much better options.

Are here any ethnic food stores nearby? I bet a place that has Asian foods of various sorts would have something like this.

Just FYI, if it helps your search any, I usually see the liquid in the middle of a coconut referred to as "coconut water" these days, whereas coconut milk tends to be water combined with coconut meat and then strained out again. :)

The one I use is Natural Values natural coconut milk. The organic has guar gum, but the natural doesn't.

Maybe try the canned coconut milk instead of the tetra-pack or refrigerated kind? It's super high in calories and fat, but they do make a lite variety. If you can find the organic kind, it should be free of all those additives. It should be in the International section of your supermarket.

Canned and organic, you say. I'll pass that on, I don't know if a heavy fat version is okay but additive-free would be excellent.
