Coconut Milk

My mother is on some specialty diet that involves a lot of non-processed foods. She needs coconut milk that does not include guar gum or sugar, and has looked at Trader Joe's, PCC, Fred Meyer, and Safeway, which is most of the grocery stores in our area. I don't think you have to press it...I believe Mark Bittman says you can make coconut milk by blending shredded coconut with water.

I can look up exactly what it is he says when I get home from work today. Bittmans advice is usually right on, but I may be misrepresenting him. ;) I'll see if he lists proportions and whatnot.

Try coconut cream. It's coconut milk with less water in it, so you could probably just dilute it with some water. I found Kara Coconut Cream in the Asian section at walmart. I don't remember the exact ingredients off the package, but I don't think there was any guar gum or sugar.

Well, there are many in the market.. though still the freshly squeezed out milk is the BEST :)
