my absolute favorite leftovers are home-made enchiladas and rice with a bit of extra sauce. they don't freeze well, but generally two large pans are gone over the weekend anyway. homemade eggrolls are also excellent when reheated in the oven and other chinese food if you take the time to heat it up in a pan instead of the microwave. i made a tofu curry the other week that heated up like new from being frozen. ...yummmmm...

i actually don't cook things (unless i'm experimenting) that i don't like reheated. mainly because i still cook for a family, even if i'm the only one eating.

yeah, so i got distracted by food. but, good call on the year off...i wish i'd done the same. and yea for the lit class, i'm really looking forward to it (especially since there's only one repeat book for me)

Almost any type of hamburger helper is better after it's sat in the fridge for a day and congealed. Same with black beans and rice. Gets that gooey consistency.
