I’ve been thinking a lot about eating better, trouble is my mother was a single mom so most of our meal growing up came from a box, and my grandmother who cooked from scratch was not a patience teacher. So, my challenge is to learn basic cooking stuff later in life without paying tons of cash for lessons. Here are some vids I would say are the top ( Read more... )

I like cooking other liquids into rice besides water. Chicken brother usually, but after sauteeing chicken, a Cuban taught me to use saffron, onion, and beer, with diced tomato, for a Cuban rice and chicken dish.

Brown rice also takes longer as well as more water. The kernels are very dense.

Good to know about the brown rice. Been hearing it's better for you than the white rice so want to give it a try. I LOVE wild rice but it's so expensive.

I'd recommend Alton Brown for good basic food prep instructions.

The best how-to I've seen for brown rice was from Qi magazine. Wash the rice first, skim off hulls or anything else that floats to the top, bring it to a boil, stir it up, and after about 10 minutes of brisk boiling, put a tight lid on and .. turn it off. This way, the rice never burns, and you can leave it in the morning and go to work. I make a big pot and use it for several meals, or pack it into lunches for my partner. Brown rice has a lot more flavor and texture (and try the other colors -- red rice is fantastic with sauteed onion, mushrooms and red pepper slices ( ... )

I goggled hom now and he looks pretty interesting. I think I need to write a story some day about a butch with her own cable cooking show. Now that's a show I'd watch. Something set for gal on budjets.

I keep telling my partner she should do a research-cook show. She worked out a way to make whole-grain pancakes that don't have the texture and consistency of doorstops... but for some reason she prefers to keep teaching math.

Being a teacher keeps a gal buzy. Tell her she could do a webcast, even make cash on the side doing it, sell the vid, takes less time. :)

I found that buying and reading really old cookbooks was a great help. Modern cookbooks are all about microwaves and opening packets and tins, but the old pre 1950's cookbooks tell you how to do everything from scratch. I've got pretty good at most stuff -- except pie pastry ::hangs head in shame:: I must be missing the spot in my brain where most people have pie pastry.

I can't do anything that invoves rolling out dough. Even my sugar cookies are pretty pathetic. Fortunatly my kids don't see this as a need to do for a good mom, so that's a mercy. Long as thier mom can handle a power tool and lift heavy furnature thier plenty proud. Thank goddess for butchy grandmothers. :)

Ming Tsai! I do lovE him, he 's so gently and comforting and educational. My roommate and I were watching him the other day and likened him to Mr. Rodgers.

I wish he had more utube vids. I need to find when to catch his show. He is so comfortable feeling. He's a great teacher.
