I have a Keeper Moon Cup too, and the stem really irritated me for the first cycle or so. Now, I've gotten used to it and hardly notice it anymore, even though I only trimmed a tiny bit off.
When you remove it, try to push it into kind of a C fold by pushing in the top part of the rim. I find this works pretty well as far as letting me remove the cup painlessly and without mess.
1- I agree that you should keep using it inside out through the whole cycle before cutting the whole stem off, or just trim it bit by bit if you're not totally confident it's the best thing to do.
2- I started using my cup as a virgin, and there was no way I could remove it without re-folding it. Now that the wort part of my hymen is gone (was in the same place as yours), I still have to fish around and re-fold it, but it's not quite as dire. The only tricks I know for making it less messy would be to change your angle of approach. Maybe slide your finger up the side of the cup from the "bottom" side of your vagina as opposed to the "front," or something like that.
I have a Keeper Moon Cup as well. I didn't shorten my stem, I still use it for removal. But I did bevel it to make it more comfortable. The bottom of the stem looks like this \_/ instead of this |_|. It's less pokey that way.
Of course, if you have no trouble removing it without the stem, hack away. :)
I don't have much hymen left, but I fold the rim in for removal as well. I try to position myself over the toilet so that the cup is straight up and down so less blood will spill out. But generally it's kind of messy. I figure I was going to wash my hands anyway.
Your cervix should be fine. I mean, its not like it just disappears lol. If anyone knows about high cervices, its me. Most of the time, I can't even reach my cervix. This brings me to my next point. Removal. So, I do what you do. I break the seal at the rim and push the cup into a punch down fold and remove. Its the only way I can remove it. I've tried pinching the base, but I can't get two fingers in for removal. (I'm a virgin, too) If your cup goes too high, you can also bear down with your pelvic floor muscles, almost like giving birth to the cup to help bring the cup down within reach.
