Yeesh, It's been a long time.  Ok, on the Strawberry Lychee:  I used 2 pounds of fresh Lychees and 8 pounds of canned, rinsed off the syrup in them.  And put it in the blender.  Then in a mesh bag.  The bag has been in about 3 weeks, so it's time to come out.  I wil do so in about 2 more weeks.  That is all

Cinna-Raz Time- Raspberry Thyme, touch of cinnamon
Racked this onto some clearing agent, took out the medium toasted oak cubes.  Tasted really nice.  The cinnamon isn't very strong, almost not there.  Hope that will be ok.  The medium toast oak cubed did have a good mellowing flavor that seemed to go well.  I am ( Read more... )

Ok, So I finally got to my mead.  Yeah, bad me being lazy.  Good thing the Mead is a bit forgiving.  I dealt with almost all of the carboys that I have.  For those keeping track at home, that's 8.  Capping myself off there due to 1. honey cost and 2. amount of work needed on all of it, and 3. no room at home, if I take up more room then my wife ( Read more... )

Ammeretto Cream Bochett MeadOk, So I bottled the Ameretto Cream.  It turned out not so creamy.  Very good on the carmel almond side.  The almond is more of an aftertaste.  And I did get told that it has an aftertaste of the cream.  We shall see how it ages.  It should be increadible.  I ended up with 8 bottles over expected yeild of 2 cases.  So, ( Read more... )
