Ok, did some work on sunday.
Cinna-Raz Time- Raspberry Thyme, touch of cinnamon
Racked this onto some clearing agent, took out the medium toasted oak cubes. Tasted really nice. The cinnamon isn't very strong, almost not there. Hope that will be ok. The medium toast oak cubed did have a good mellowing flavor that seemed to go well. I am trying out a new clearing agent, Bioclear. The guy at the brew store said it will clear it up almost as clear as a filtering process would. We shall see.
PLM2- Pineapple Lime Mint part 2
Racked this one off and took out the medium toast oak chips. I also added the clearing agent here, almost didn't need it. Oh, My this one tastes good. Mostly pineapple flavor with a bit of the lime and mint. The mint isn't really strong but I hope that it gets more prevalent when it ages.
Strawberry Rue- Strawberry Rhubarb
Racked this one, took out the light toast oak chips, Put in some clairfyer. Tasted really good, not as tart as I was thinking, only used 2.5 pounds of rhubarb though. It tastes really strawberry with just a bit of tart. Really good. No allspice taste at all. I was too light on it.
Apricot Almond Spice
Heavy Spice flavor, nearly opaque still. Same as the others, removed oak chips, put in clarifyer. It tastes good but has a scent from the oak chips, Not sure about this one.
Green Tea, Ginseng
Took off the bamboo leaves, racked, put in clarifyer. Tasted great, put in the ginseng finally. It was very opaque but good, this one may shine greatly in time. We shall see.
Vanilla Haze- Vanilla Hazelnut
Racked this one, backsweetened it with 6 pounds of honey, then added the hazelnut extract. The flavor comes through wonderfully so far. High hopes.
Cherry Polm Hydromel- Low alcohol Cherry Polmagranite with bread yeast
This one seemed to be still fermentging, backsweetened about 4 pounds honey, stablized, put in clarifyer. Should be good.
