Today was GORGEOUS. SO warm and the wind I was worried about wasn't that bad at all. Some douche even had his sprinklers going (there's still a risk of frost, brainiac) so I had to walk the dog in the road so we wouldn't get wet

I had an amazing tuna and spinach lasagna once in a little Italian restaurant in York - it was SO good. I've never tried making it myself, but I often think about it!
No, I think it had ricotta cheese and the usual white sauce - may not have been ricotta, although I can't think what else it could have been, but definitely no tomato sauce.
We've had such a great winter that the dog and I have a pretty established routine once I get home from work. The crappy part is that she has to sniff and pee on EVERYTHING so I'm always trying to tug her along and keep her on task. She loves her walks but she can be super annoying when I get a good pace going.
I have been wanting to try crock pot lasagna but I am not a fan of mushy pasta and I also don't like too much sauce, so I don't know. I do make a really good Mexican style lasagna. Instead of tomato sauce, you use salsa, enchilada sauce, taco sauce, or a combination of the three, depending on your taste. Use cheddar instead of mozzarella. Season the meat with taco seasoning. Top with sour cream and green onions when you serve it. Still, all the layering is a lot of work.
Now I want what you're talking about with shredded chicken and to roll it up in tortillas. Yaaaaaas.
I hear you, I'm incredibly picky with my pasta. I rarely get the craving and hardly like red sauce. I hate regular spaghetti and usually eat white-sauce pasta. The last time I ordered pasta at a restaurant was at an authentic Italian place in NYC in 2014.
I'm a meat-and-cheese girl for lasagna myself. I have a few recipes I rotate through, mostly this one, and then last time I combined several recipes, which worked really well.
You make your sauce from scratch? Respect! I'm far too lazy. I used a couple bottles of sauce that the best before date on them was last year, LOL. Turned out pretty good, basically what the lasagna looks like once you mush it up on your plate so I saved that effort.
