Chilis and soups freeze beautifully. I made a huge batch of these awesome dudes last week, along with a batch of mushroom gravy. They're packed away in tupperware for lunches this week. I like lentils, too - I make a big batch on Sundays, and stir them into soups and sauces all week. Whatever's left gets mixed with eggs and bread crumbs and spices and made into lentil burgers for the freezer. I am big on freezing stuff, to be thawed in the office microwave. (Though I guess the chickpea/wheat gluten/lentil push of late indicates my desperate need for more protein, which is my culinary focus right now.)
mmm, i like the sound of chickpea cutlets and lentil burgers. i am going to add those to my list.
i am also interested in protein (to counteract my general tendency to eat huge handfuls of sugar and white flour and the general mania and malaise that can induce)!
microwaves kind of freak me out. but maybe i should try to embrace them a little.
do you have any trouble with the tupperware lunch option? i see myself, like, having trouble shoving the tupperware into my bag. and then losing them. but maybe that's just the power of negative thinking.

Did you mention that you have actually moved??? I know that the move was coming, but did you mention it and I missed it?? Or did I read it then forget it? How did the search for your new domicile go???
Oh, and to your question: every time we bake a chicken, D processes the leftovers into soup concentrate with leek and carrots. The result is three frozen baggies of yum that are heated up, wattered down and prepared with soup noodles ... more of a stew than a soup.
Risotto takes a while to make, but it's just as easy to make a lot, and it keeps well. I find that it sometimes even tastes better a day or two later, once everything's sort of settled in. I'm partial to this recipe, into which I throw whatever I want, vegetable-wise.

i also like (um...microwaved) veggie burger patties. something about frozen food feels wrong to me, though. i don't know why. i'm certainly happy to eat food from a can.
