do you ever prepare a big mess of food, and then eat it over several days? i am trying to think of good recipes for the lazy-except-once-a-week cook -- stuff you can pull out of the fridge and be eating ten minutes later ( Read more... )

Oh, the blog I got the chickpea cutlet recipe from? I have never made a single bad recipe from that site, ever. I like food blogs very much, and read many of them. (But admittedly, there is a heavy emphasis on baking blogs in my RSS repertoire.)

We don't have a microwave at home, and I reheat plenty of stuff in the oven or on the stove just fine. It is a pain when you are hungry RIGHT THIS MINUTE, but I can usually distract myself while stuff thaws. Tonight's lentil burgers, repurposed as "meatballs", reheated before the spaghetti had even finished cooking.

Anyway, the tupperware lunch. I would probably have a harder time with it except we have a kitchen at work with a sink and everything, so I can wash my dishes and take them home clean. Then it's not such a problem when I shove them into my bag at the end of the day and forget them until I have a collection going. The real problem is remembering to grab something from the freezer in the morning, or at least that is the problem in theory. I can't say I've actually had that problem, or when I do, I guess I have a wide assortment of lunch options near work, and the frozen chickpea cutlet can wait another day.
