I used to think I hated beets, but I love beet greens. So the year I grew beet greens, it seemed a waste to just eat the tops. It turns out that small beets, only recently evicted from the soil taste much different from ones that have been sitting in the grocery store for a while, and lightyears different from the kind that have been pickled or canned.
I'm not a beet fan either, but I bought some at the farmer's market today on the strength of this. Forgot to get any cheese, though. I'll let you know what I think when I've made it!
