100 Recipes - #78 Roasted Beet Salad

I'm not a huge beet fan. I mean, they're ok. But Jason loves them, so when I noticed them at the farmer's market, I grabbed a bunch.

#78 Roasted Beet Salad I stuck pretty closely to this recipe, although I didn't read carefully and ended up cutting off all of the stems, which didn't seem to make any difference. I came up with a good trick--when I took the beets out of the oven, before unwrapping them, I dunked them in cold water to help speed up the cooling process. That worked well enough that I was pretty much able to go right ahead with peeling and dicing them. I also mixed the goat cheese (not feta, because we had crumbled goat cheese to use up and it's another of Jason's favorites) into the vinaigrette and stirred that up with the beets, so it melted. Next time I would cut down a little on the oil, although not if I'm planning to serve it over greens. Another, very similar recipe, called for bacon instead of cheese and if I were doing this as a main dish, I'd go with both. But as a side with roasted chicken breasts, that seemed de trop

Overall: totally delicious and I will do this again early and often.
