#33 Carrot Oatmeal Cookies After my success a few days ago, I decided to go ahead and try this recipe. They're just out of the oven and oh yes, they are the tasty! I've been hearing good things about coconut oil for cooking. Or you could use it as an oil treatment on your hair! (Noting the recipe- looks good, will try.)

A friend of mine has a giant tub of the stuff and uses it to make the most luscious soap. I'll have to borrow a cup of coconut oil :)

Hmmm... I'll have to look for another recipe, if this calls for coconut oil, since I'm allergic to coconut, but I adore oatmeal cookies and they sound really good, like a mix between oatmeal cookies and carrot cake!

That's exactly what they're like. I'd think you could use shortening or butter in place of the coconut oil--I think making this vegan was part of the goal and you don't care about that--but it might take some experimentation. Aww--multiple batches of oatmeal cookies in the name of science--such hardship!
