Hmm... as far as most of those "characters" questions, I really don't know, and I think it's equally possible that the show didn't explain them as it is that the show did explain and I've forgotten.
As far as those that are opinion:
Am I the only one who liked Willow's white hair in "Chosen"? I didn't really, but uh, Kennedy did!
Am I the only one who liked Eve (as a character)? No, I've definitely heard of some people who do!
Does Illyria pee? Does she have to take off that whole suit every time she does it? Is there a zipper? Have you ever gone skiing? You have to wear about 20 complicated layers and needing to pee once you've got that on is awful. Sorry, that's a little off-topic, but I'm trying to sympathize. I don't know, did we ever see her eat or drink? She'd probably have to if she does.

Because she only ever cared about herself. How dare she call her daughter a burden? Because she kicked Buffy out and then bitched her out for it when Buffy came back. Because she was not a good mother, while I got the impression that the writers, etc, expected us to sympathize with her. Because the other characters written around her were supposed to like her, love her, or respect her, and I saw nothing to like or love or respect. Because the actress who played her was bad. Because the few times the writers wrote her being a good mom even a great actress like SMG couldn't work up a decent chemistry because KS was just so freakin' bad. Because she didn't die earlier. Because her name is Joyce and that's my name and that pisses me off.
Plus, she had kinda buggy eyes.

-The actress who played Justine annoyed me, so maybe that's a part of it, but I also hated the whole "uber-anti-Slayer/Watcher" vibe between her and Holtz. Also, Holtz. Also, Angel being a fucktard and Cordy being a Saint. AtS S3 overall makes me want to cry tears of blood. S4 (and the boit of possible retcon by Skip) made up for most of it, but lingering issues remain. I may need therapy.
-I think Losing My Religion suffered terribly by my whacky fondness for italics. A year or so after I wrote it, I took out most of them. The fic worked- better, actually. I like the *idea* of Losing My Religion better than the actual execution. Much like AtS S3!
-I thought both Holtz and Justine brought interesting themes into play--the kind of themes that make me love both AtS and Angel himself. But yeah. The Good Version Of S3 lives only in my head, along with the Right Version Of Phantom Of The Opera and the Film Of Jane Eyre Starring Alan Rickman.

JM's accent was a contruct of wonder - posh/Northern/mockney/Californian. Plausible. After ASH left, the accent, and the word choice, stopped hitting the mark.

I had trouble with Lilah. I liked her as a character, and really got into her when she started in on Wesley. But I guess there was something about the actress that just . . . I dunno; I didn't believe her. The girl who played Eve instantly had the grating, sexy vibe and chemistry (positive or negative) I think Lilah was supposed to have but never had for me--but the writing and character development for Eve were never anywhere near as good as for Lilah.

Connor and Holtz were never supposed to be the only humans in Quor'toth. In fact, *someone* had to name him the Destroyer. The slang didn't come after one ep, although it did come pretty fast. Connor has peculiar speech patterns throughout his run though- sort of like how Angel gets an Irish lilt when he's pissy and/or soulless, Connor reverts to formal speech when he's pissy and/or Destroyer-y.
Word to DB's hair. I heard him talk about it at a con once, I think? Or maybe someone else talked about it. Apparently, he wanted to do his own hair, and they wouldn't let him, and it became a running gag.
Fod, to whom I defer re all things Connor, has an entire treatise on the humans in Quor'toth. I'll let her spell it all out sometime.
I dunno about Gwen. I think she was just one of many failed attempts to het Angel up. But unless it was a short blonde ala Buffy or Darla, or had a dick ala every male in the verse, DB just didn't have the chemistry with 'em. So they went the way of that Asian chick, and Kate, and Cordelia, and...
