I love the fact that there seems to be security surrounding the keeping of the sour starter than there is around the coke recipe!!!!

Remember to use only one hand for the kneading, otherwise you will spread the rye goo all over the place :D I demand a full report then, about the process and especially the result! I wonder about your sour rye bread though, it couldn't possibly be the Finnish sort over there, so WHAT is it then??

And yes :D Those families who HAVE a decades old starter guard their treasure better than anything they own :D

I may have to try this...it looks heavenly. :) And it's autumn: that means I'm going to go into my 'nesting/laying-in-of-provisions/settling-down-for-winter' mode very soon.

I really don't know! I have a vague memory of making a starter with buttermilk long time ago, and if I remember correctly, it turned out just fine, but since I couldn't find a recipe for that, and when talking with the ladies at the office I was informed that the buttermilk sort is totally different from proper Finnish sour dough, I gave up looking for it. It would be so much easier to make the starter with local buttermilk than trying to find Finnish sour rye bread or crackers, after all!

Finn crisps are addictive, that much I know :D

It's SO very good (if you can remember ;) Baking it yourself is a bit too much trouble for my liking, though, but I'm sure I would do it regularly if I lived abroads :D

Yay! This is fantastic! I was just feeling woeful about the fact that all the rye breads for sale in the stores around here have caroway seeds in them...

Oh YUCK!!!! Caraway should be illegal!!! And they hide it in bread so that you never know which one has it!!! Especially around Christmas you have to be really careful what you buy; the loaves are full of molasses and RAISINS, YUCK!!!! Pulla is pulla, and bread is bread; there's absolutely no need to mix them!!! :D

Oh my god, no kidding!!! The first time I bought pulla at a store it had candied fruit in it! Blech!!! Now I just wait for my mom to go into her baking mode...happens every year eventually. ;) This year I actually have an oven, so I suppose there's no excuse for me not to try it myself.
