Stollen

I made Stollen. Now, any of you who knows anything remotely about German Christmas will know that this is kinda fundamental to the Advent/Weihnachtsfesten they have. It's a bit burned but those bits will have to be cut off anyway or else it won't fit into the box! I made Mandelstollen rather than Christstollen because it's less complicated and, ( Read more... )

I am soooo jealous - I can't eat stollen or mince pies this year *pouts* as I can't seem to find any wheat free ones anywhere (though there were gluten free mince pies in H and B like a month ago - think they must have sold out or something) and I am too ill to bother making any :o(

So, yeah - me very green and jealous right now!!

I was thinking about that when I was making it: one of our friends, Simon V., has a YEAST allergy and he can't eat so much stuff it's unbelievable! Even lots of fruit because it contains a similar subtance in the skin (like apples and grapes). He says he's sick of water.

Wonder what it must be like for wheat/gluten allergy sufferers at this time of year? No stuffing, mince pies, cake, pudding, turkey sandwiches... OK, so not all bad! I'll see what I can find on cornflour baking.

What exactly is Stollen? I'm afraid you lost me completely when you started differentiating between different types!

It's like a cross between cake and bread, really. You use yeast to make it rise and it tastes a bit like bread, but it's covered in icing sugar and one (Christstollen) contains raisins and other dried fruit and ground almonds and more sugar and egg and some other sweet/fatty stuff, whereas Mandelstollen just has ground almonds and icing sugar all over it (no eggs or extra sugar). It's the shape that makes it called 'Stollen' more than anything: it's really just a sweetbread.

mmm.... stollen.. i adore stollen, especially the type with the band of marzipan running through the middle.... i would have to make some, but marzipan is so freaking expensive here! *sigh* maybe another thing that will wait until next year! enjoy, it sounds delicious!

I'm not a fan of 'Marzipanstollen': I really like the fruity Christstollen, but the almond one's a bit bland for me. If I was going to make one for myself, I'd put the effort into Christstollen!

Can you also not get the ingredients for marzipan cheap?
