I Made the Pork Tenderloin!
I remembered in time to prep and cook the pork tenderloin, finally:- Line a 9x13" baking dish with aluminum foil.
- Preheat the oven to 350˚F.
- Remove the 2 pork tenderloins from their shrink-wrapping and put them, and any liquid, into the baking dish.
- Slather the pork with hoisin sauce (about 1 tbsp per tenderloin).

Dinner Fails and Fallbacks
On Thursday for dinner I was planning to roast the pork tenderloin that I'd set in the fridge to defrost. Alas it hadn't defrosted enough so I had to go to a fallback plan. Pizza Buffet
I went to the pizza buffet on Monday (the 27th) for lunch. I probably should've stayed home and done soup or a pocket sammich, but Mondays are double-punch days on the loyalty card (punch 10 and the next meal is free), so I went.
