Heh. I wish I could do that. The default around here is fluffy omelet when things are really bad, but we didn't have any eggs yesterday. I made tuna melts:) I was just saying to my kids, why can't we eat spaghetti like normal people? LOL!

How did you find me, by the way? Nice to meet you.

We pretty much always have sausages in the freezer (regular for me, turkey ones for SO) so in a pinch I'll pull those out, simmer till thawed and cooked, and have maybe broccoli or peas with them which we also always have.

It depends on the season of the year, though. In summer one of my fallbacks is chicken kebabs of one sort or another; it's not that easy to make, but I've done it tons so it doesn't require much thought. In winter I put a chicken in the crockpot.

Yeah, I like those "thoughtless" meals.

We had these Italian lamb sausages that were delicious, but we ate them all up and dh doesn't want me to order more this year:( DH eats chicken sausages for breakfast, so I don't think he's too keen on sausages for emergency meals. That's what the canned fish is for. Or eggs:)

*nods* During the week we have cereal or toast for breakfast; only a big breakfast one weekend morning, usually Sunday, and I rarely make sausages even then, so for us it works fine as a dinner dish.

Heh. I'm so bad. We rarely have a big breakfast. Bacon is a nice dinner item, though, in the event that we need something to go with eggs, say:)

Another easy favorite of mine (because we've discussed how lazy I am about cooking) is tofu curry. This is abetted by Trader Joe's Thai Yellow Curry sauce, which is a bargain at $2.69 a bottle.

Very simple:

- Get a brick of tofu. Dice it up.
- Grill tofu.
- Dice some onions. Add to tofu.
- Dice some other veggies (I usually use TJ's frozen stir-fry vegetables -- lazy, q.v.) and add them to the mix.
- Pour in the entire contents of the curry sauce bottle.
- Add a few ounces of water to the empty bottle, recap it, and shake it up to get the remaining sauce loose. Add that to the pan.
- Bring it to a boil and let it simmer for a few minutes.
- Serve with noodles or rice.

Ironically, it's the rice that always gets me. I have an amazing inability to even make instant brown rice turn out properly. I end up saving the noodles from something else I buy (for which I don't use them) and serving those with this instead.

Yum. Sounds good. I'm a fan of Thai Kitchen's green curry paste, myself. I like to make a curry with that and coconut milk, when I make curry, which is not often (enough).

I got a rice cooker because I'm constitutionally incapable of making rice on the stove.

Do you make your own enchiladas? I'm assuming yes.

I make "cheesy noodles" for my daughter which consist of noodles, butter, and cheese. I think it's much less cheese than if I were to make a white sauce.

I miss spaghetti with meat sauce.

That marinated lamb sounds divine. We miss lamb 'round here. I can't wait to get my lamb next month! (We buy whole lambs.).

Interesting to see what other families eat:)
