You can also try a nifty chicken/tortellini/spinach soup, if you can find organic tortellini:
As much chicken broth as you think you need to feed the family 2 chicken breasts, diced small (or more, however many you think you need to feed everyone) about 1 c tortellini, or however much you want Chopped spinach (chop small, or buy frozen chopped) (as much as you want) garlic olive oil thyme basil
In soup pot, saute garlic in olive oil for 1-2 minutes or until you can smell it. Add chicken, thyme, and basil, and brown chicken thoroughly. Pour in the chicken stock, bring to a boil, and add the tortellini. Turn heat down and simmer until the tortellini are almost done. Add spinach and cook for just a few minutes.
Et voila -- protein from chicken and tortellini filling, iron and folate from spinach, and goodness all around. You can serve it with warm, crusty whole wheat bread, too. :)
I'm so glad the party went well! :-D You must tell me how this spinach soup goes over. I'm very interested :-D Spinach is something The Monkey doesn't object to, so I'm trying to find different ways to eat it instead of just in a salad or in a pressure cooker.
I liked it! It will be providing me with my green leafy requirements for the rest of the week, I think. :) SAM ate some of the raw spinach while I was cooking, but scorned his dinner once it was actually done. That's par for the course, he only eats soup when it's mine, at a restaurant. :)
I couldn't find my hand-held milkshake blender (still feels like it should be around somewhere), so I had to use the food processor. Pouring it from one thing to the other was a pain, and made for a lot of cleanup, but it was a good, thick, tasty spinach soup. I can post the recipe next time I go upstairs.
Mine is the Food City Bearden store on Papermil. We don't make sushi but do sell some premade stuff that is ok. We do have a really good organic section.
If you have any trouble with water retention (ie: swelling of the ankles and wrists), try taking a liquid calcium/magnesium supplement. When I didn't take this, my ankles started at my knees. When I was taking it, I actually had ankle bones.
Also, I took liquid chlorophyll instead of standard pre-natal vitamins, but that was under my mid-wife's supervision. I got the mint flavor and added a touch of honey. It was like minty sweet tea.
I never did last time, but I'll keep it in mind. It will be summer this time...
Hmm, what's the particular benefit from chlorophyll? I like the vitamins I'm taking right now - they're all natural, from real food sources, and have all the trace stuff I might miss. The pills are green. :) There's another brand I'd really like - organic ones, with all sorts of good stuff in them... but they're $70 a bottle. :(
