What a cutie! I wish my hams were more cuddle-prone, I think they're getting there though :)

I'm not sure about your first two questions. My guess for the third: at some parts of the day hams are just very energetic and it may not be stress. The more experienced ham owners here will likely have more to say though.

Those Forti Diet pellets are fine. With most mixed food, hamsters tend to only eat their favorite part, so they are actually getting a better balanced diet with pellets.

I don't know about hammies but I know that most rat owners feed their rats a pellet/block diet with the addition of some veggies and a little cooked meat as both supplement and treat. I don't see why hammies shouldn't do well on a similar diet.
