Easy, Healthy Couscous Tabbouleh

I'd been craving a vegetable-loaded, bright, lemony couscous dish for quite awhile. I had this delicious couscous tabbouleh at a local restaurant and had to make it at home. I like to make a big batch on Sunday and eat it throughout the week ( Read more... )

The dish looks lovely ... fresh, tasty and light. I wonder what the addition of some crumbled feta would do to it.

When cooking for one, it's difficult to use up perishable items like fresh spices and scallions before they go bad and I hate to waste the money by having to throw them away at that point. I also don't like cucumbers, and HATE raw tomatoes, which limits a lot of dishes that absolutely require them.

This is one of my favourite couscous dishes. It's a great side for a bbq spread as I did in this post. I think you'll enjoy it.

Glad you think so. Your posts are always colourful, tasty and inspirational. I'm not hugely fond of sweet dishes/desserts. In fact, I like to bake them, as a challenge to try new techniques and recipes, more than to eat them and usually end up giving the results away. I would be thrilled to live close to you and be a taste tester of your baked goods, mousse bars etc.
