I LOVE beef heart. Typically I roast it whole, no additional spices on it. eat with salt and pepper (its a much heavier meatier flavor that I love). With leftovers from that, I usually make chili. just chunk up the already cooked heart and toss it into the chili pot. One of my favorite parts of a cow!

Tongue is really great just simply cooked, then gently sprinkled with curry seasoning, a home made curry sauce and some rice.

Liver? I always ate it with cream based gravy and potatoes when I grew up. With added lingonberry. (I'm Swedish. It's almost a given.) But Liver's also good with some salsa, corn and flavored rice.

Consider the risk of BSE in the brain. The USDA testing programme for this is as if designed specifically to fail to detect it.

The tail would seem ideal for oxtail soup.

With the tongue you need to "peel" off the top of it cause it's tough, it mostly means taking a knife to it.

a lot of those bits are not thrown away actually

beef heart is like a beefier steak

you can make a really good pate with the liver

the tail would be good braised like ox tails
